In order to investigation of the effect of water stress on some wheat qualitative traits, a split plot experiment based on randomized block design with three replication in research farm of campus of agriculture and natural resources of Razi university was used. Main factor was water regime in two levels include: control and water stress. Water stress applied based on the result of amberothermic curve with elimination of irrigation around 21 may 2013. Sub plot was some bread wheat cultivars (Norestar, Zarin, Pishgam, Uroum, Sivand and Alvand). The results showed that, in terms of the evaluated traits, significant differences were seed between different cultivars. Water stress significantly affect on qualitative traits of different bread wheat cultivars. For example, water stress significantly increased seed protein (3.85%) and fiber (5.5%) and significantly decreased starch (3.18%) in the grains of different evaluated bread wheat cultivars. Zarin cultivar had the highest seed protein (12.57%) between different bread wheat cultivars.
